Pasta la Vista, Baby!

I inherited this pasta machine from a neighbor this week. Judging from the instructional booklet – I believe it dates back to the Truman administration. I always wanted a pasta machine, but a lack of storage space in my kitchen prevented me from purchasing one. So when this little gem dropped in my lap, I suddenly had dreams of hand cut fettuccine and glistening pans of meaty lasagna!

I mixed the dough in my Cuisinart, but you can do it in a stand mixer, or by hand.

1 1/2 cups all purpose flour

1 cup Semolina

4 eggs, room temperature

Combine the ingredients, and knead with the palm of your hands for several minutes. Wrap the dough in plastic and let it rest for an hour.

Cut the dough into 6 pieces and flatten into a rectangle. With the pasta machine set to the widest setting, pass the dough through, fold in half, and pass it through again.

Turn the machine’s knob to the next narrowest setting, fold dough in half and pass through. Repeat until you’ve reached your desired thickness.

Lasagna ready sheets!

Of course, since this was my first time using the Imperia, I just HAD to try out the pasta cutter – I squealed when I saw the fettuccine!!!

Dust the pasta with semolina to keep it from sticking.

I have to say – this was so much fun to do, it was easier than I expected, and it went relatively quick for this first timer! I can’t wait to make it again, I definitely see a Lasagna Bolognese in my future!!!
