Maria! I’ve Just Met A Girl Named Maria

My friend, Maria got married on Saturday. She asked me to make some cookie trays for the occasion. Maria is probably one of the funniest and most sarcastic people I have ever met. I’m pretty sure she invented the eye roll. Having dealt with brides before – we were discussing what I would make and I had a million questions about the details that bridezillas are famous for. My girl wasn’t having any of it. All she kept saying was, “I don’t care, I trust you.” I thought she’d check in periodically, but that didn’t happen until she sent me a text from the rehearsal dinner saying “I hope we are still on for tomorrow.” I couldn’t stop laughing. 

Cups

I made lemon bars, sprinkle cookies, and a mini cupcake version of this cake. I used Nestle mini morsels instead of regular chocolate chips, and my baking time in 1 1/4″ cups was 14 minutes. This cake is best mixed by hand.

Batter

  • 12 tablespoons butter
  • 6 ounces unsweetened chocolate, chopped
  • 6 eggs
  • 3 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 cups chocolate chips

Chocolate

1. Preheat oven to 350º. Wait for bride-to-be to call. Throw hands up in the air and grease two 9″ cake pans and line with parchment paper.

2. Melt the butter and unsweetened chocolate in a heat proof bowl over simmering water. Let cool. Glance at your email.

3. In a large bowl, whisk the eggs, sugar, salt, and vanilla. Stir in the butter – chocolate mixture, then the flour and chocolate chips. Check for Facebook messages.

4. Bake for 30 to 35 minutes, test with a toothpick. Pull cell phone out of bag and put it back. Let cool on a rack and frost with chocolate cream cheese frosting.

All kidding aside – I wish love, laughter, and many, many years of happiness to Maria and Mark. Congratulations!!!

    I bake a lot – but I must confess, when it’s for an important event like a wedding it’s a little nerve wracking! I’m just happy everything turned out okay.
