Not Just Another Apple Cake

I found this gem in the New York Times – Easy-As-Pie Apple Cake. It was such a hit, I made it twice in one week!  The mark of a good apple cake is if it’s breakfast worthy – this one is, I did the research myself. 

  • 1 cup flour
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 tablespoons butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups peeled, diced apples
  1. Grease and flour a 9″ tart pan. Preheat oven to 350º.
  2. In a medium bowl, whisk flour, salt, baking soda, cinnamon, and nutmeg.
  3. In a large bowl with an electric mixer, cream butter and sugar. Add the vanilla and egg, then the flour mixture until just combined. Fold in the apples.
  4. Spread evenly into pan and bake for 40 to 45 minutes, until golden – and a toothpick inserted into the center comes out clean. Let cool on a wire rack.
