Peanut Butter Chocolate Chip Banana Bread

There were three spotted, overripe bananas in the fruit bowl begging to be a banana bread. I wanted to try something different, so I substituted peanut butter for some of the oil, and added chocolate chips. Because chocolate chips make everything taste better. 

  • 3 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/ teaspoon salt
  • 1 cup chocolate chips
  1. Preheat oven to 350º and grease an 8″ x 4″ loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, stir the bananas, peanut butter, oil, egg, and sugars. Add the dry ingredients and mix until just combined.
  4. Poor into prepared pan and bake for 60 minutes, testing with a toothpick.
  5. Let cool on wire rack for 15 minutes, turn out the bread from the pan, and continue to cool.

    Not bread you’d put salami and cheese on, but a bread to have with your coffee in the morning.
