Peach Tart

This tart is a snap to throw together – a press in dough, sliced peaches, and a sprinkled topping. A short bake time is perfect for the heat wave we’ve been having! 

For the crust:

  • 1 1/4 cups flour
  • 1 stick of unsalted butter
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar

1. Pulse all ingredients in a Cuisinart until crumbs form or combine in a large bowl with a fork.

2. Transfer dough to a 9 inch tart pan. Press dough evenly on the bottom and up the sides of the pan.

For the filling:

  • 5 ripe peaches, pitted and sliced into wedges
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 tablespoons flour
  • 1/4 teaspoon kosher salt
  • 2 tablespoons butter

  1. Preheat oven to 425º. Slice peaches and set aside.
  2. In a medium bowl combine sugars, salt, and butter until crumbly.
  3. Arrange peach slices in concentric circles, sprinkle with flour mixture.
  4. Bake for 35 to 45 minutes. Let cool on a wire rack.
