M&M Bars

 

I’m in a baking frenzy right now – but I thought I’d throw this up because when pressed for time – these bar cookies are fabulous! Easy to throw together, they travel well, and who on the planet doesn’t love M&Ms and chocolate chips? 

  • 1 stick butter, melted
  • 1 large egg
  • 1 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 cup M&Ms (plus more for sprinkling on top)
  • 1/2 cup chocolate chips (plus more for sprinkling on top)
  1. Preheat oven to 350º. Line an 8″ x 8″ inch baking pan with foil and coat with cooking spray, set aside.
  2. Melt butter, and set aside for 10 minutes to cool. In a large bowl, combine butter, egg, brown sugar and vanilla.
  3. Add flour and salt until incorporated. Fold in the M&Ms and chocolate chips.
  4. Pour into baking pan, smooth out with a rubber spatula. Top with remaining candy and chocolate chips, pressing them down into the dough.
  5. Bake for 28 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack and cut into bars.
