A banana bread, swirled with a chocolate batter and chocolate chips. Needless to say, it was a huge hit at our house!
3 large bananas – very ripe
1/2 cup better, melted
3/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups flour, divided
1/2 teaspoon cinnamon
1/4 cup cocoa powder
3/4 cup chocolate chips
Preheat oven to 350º. Grease a 9″ x 5″ loaf pan.
Melt butter in a large bowl in the microwave, and mash the bananas. Whisk in the brown sugar, egg, vanilla, baking soda, and salt. Stir in 1 cup of the flour until just combined.
Pour half of the batter into another bowl. In one bowl, stir in the remaining 1/4 cup of flour and cinnamon. In the second bowl, stir in the cocoa powder and chocolate chips.
Drop large spoonfuls of batter into loaf pan – banana/chocolate/banana then chocolate/banana/chocolate. Using a butter knife, make a few figure eights in the batters, marbling them together – but not too much, you want two distinct batters – you don’t want to mix them together.
Bake for 55 to 65 minutes, test with a toothpick. Cool in pan for 15 minutes, then run a knife around the sides, and turn out onto a rack.
