Easy Vinaigrette

After the hunks of holiday pie, and mountains of mashed potatoes with gravy – we try to reverse the damage with salads. I’ve been packing salad for Joe to take to work, tossing in various vegetables, olives, and cheese leftover from the holiday, along with a light vinaigrette. This salad dressing is a shortcut, it’s delicious, and easy to make – a good thing after spending two days in the kitchen cooking!

  • 1 packet of Good Seasons Italian Salad Dressing Mix
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon garlic powder
  • 2 tablespoons Hellman’s mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons cider vinegar
  • 1 1/2 tablespoons water
  1. In an empty jar, prepare the recipe for the Good Seasons Italian Dressing as it written on the back of the envelope.
  2. Add the Italian seasoning, salt, pepper, sugar, garlic powder, mayonnaise, olive oil, vinegar, and water. Beat to combine with a fork.
  3. Store in refrigerator for up to 4 weeks. Before using, be sure to give the jar a good shake.
