Peanut Butter Banana Brownies

We’re back after technical difficulties. Our internet went down on Sunday morning and thanks to Marko – a technician with Verizon who braved the snow and our curious cat, got us back up and running! To celebrate our new box in the basement and router, and to use up the overripe bananas in the fruit bowl, I give you Peanut Butter Banana Brownies. 

  • 2 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/4 cup cocoa
  • 1/8 teaspoon salt
  • 1/2 cup creamy peanut butter
  1. Preheat oven to 350º, grease an 8″ x 8″ baking pan.
  2. In a large bowl, mash bananas, add sugar, butter,  and vanilla – whisk until combined.
  3. Add flour, cocoa, and salt and stir until well combined. Pour batter into pan.
  4. With a spoon, drop dollops of peanut butter on top of batter, swirl with a butter knife.
  5. Bake for 30 to 40 minutes, test with a toothpick.
  6. Set pan on a wire rack to cool.
