I’m a big fan of simple, one pan cakes. This cake is dense, with caramelized pears – perfect for after dinner, but would do in a pinch if you just so happened to run out of oatmeal!
Now that mornings are dark, and cold and it’s tough to get out of bed – there’s nothing like a muffin with oats, pears, and chocolate chips to ease the transition.
This pear pie was my favorite of the three I baked for Thanksgiving. Ripe pears thinly sliced, fanned into a pie shell, drizzled with cream, and sprinkled with sugar.
