Tomato Ricotta Tart

It’s that time of year – the tomatoes are gorgeous and I have more basil growing in my backyard than I know what to do with! This tart is the solution to my dilemma, and is perfect when paired with grilled chicken or fish.

  • 2 1/4 cups of coarse, fresh breadcrumbs
  • 1/4 cup olive oil
  • 1 cup whole milk ricotta
  • 2 large eggs
  • 3 tablespoons chopped fresh basil
  • 1 1/2 pounds of thinly sliced tomatoes (I used very large Jersey tomatoes)
  • salt and pepper

1. Preheat oven to 450º.

2. Toss the breadcrumbs, 1 tablespoon of basil and olive oil in a 9 inch springform pan (foil pans work too) pressing evenly into the bottom.

3. In a bowl, whisk the ricotta, eggs, and remaining 2 tablespoons of basil until combined. Season with salt and pepper and spread over the crust.

4. Top with the sliced tomatoes, and brush them with olive oil.

5. Bake for 40 to 45 minutes, let cool, and unmold. Serve warm. Can be made ahead of time and reheated in the microwave. Serves 4.

    In years past, I planted everything at the same time, only to have the basil gone to seed by the time the tomatoes were ripe.

    But THIS year, AHA (!) things would be different.

    I planted my tomatoes.

    And then, I waited……

    And waited….

    And I FORGOT to plant the dadgum blasted basil.

    P.S.- I think reading your blogs is making me fat.

    It’s not too late to plant basil!
    I read that you should mix epsom salts and sugar and add it to the soil because tomato plants like the magnesium. So I did it, and so far, I only have one tomato. It’s August and out of 6 plants – one tomato! However, I have a TON of basil. So here’s the deal JT – I’ll swap you basil for tomatoes – win/win!

    My soil comes out of a bag of Miracle-Gro from Home Depot and into a planter box. * rolls eyes *

    NOW you tell me!
    Two years ago, I had four plants growing in a smallish container, I had more tomatoes than I knew what to do with. I watered them when I thought of it, and I didn’t even fertilize them. That’s my plan for next year – sitck ’em in the dirt and ignore them!

    If you’re using the same soil as last year, that could be your prob.Think crop rotation.
