Caramel Cappuccino Cookies – The Best Cookies in the World!

These cookies aren’t much to look at – they’ve got no chocolate chips, nuts, or dried fruit, and they’re kind of – brown. I was less than impressed, that is until I looked at the list of ingredients: espresso powder, Dutch processed cocoa, and sweetened condensed milk. Whoa! I grabbed the baking sheets and preheated my oven immediately. These cookies are amazing – they’re chewy, with hints of coffee and caramel. If I had to chose one cookie to make for the holidays, this would be it! These spectacular cookies are the creation of Jen from Savory Simple. Bravo Jen, bravo!!!

  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon Dutch processed cocoa powder
  • 2 tablespoons espresso powder
  • 12 tablespoons unsalted butter, room temperature
  • 1/3 cup of granulated sugar
  • 1 – 14 ounce can sweetened condensed milk
  • 1 teaspoon vanilla

1. Sift the flour, salt, baking powder, espresso powder, and cocoa powder in a bowl and set aside.

2. In a separate bowl, cream the butter and sugar with an electric mixer. Add the vanilla and sweetened condensed milk, mixing for a few minutes. Add the flour mixture in batches, scrape down the sides of the bowl with a spatula, continue to blend until the ingredients are well incorporated. Chill the dough for about an hour.

3. Preheat oven to 350º, line a baking sheet with parchment paper. Using a small ice cream scoop (mine was about tablespoon size), scoop out the dough leaving about 2 inches of space between the cookies. Bake for 13 to 15 minutes, cool on a wire rack. Makes approximately three dozen cookies.
