Apple Kuchen with Cranberries

Since Thanksgiving is tomorrow, one of the things I’m thankful for are my neighbors. I have the nicest neighbors, which makes living in a big city feel more like a small town. I’ve made a couple of apple kuchens – a small token of how much I appreciate them! 

  • 6 tablespoons butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 2 Granny Smith apples
  • 1/2 cup fresh cranberries
  • cinnamon sugar (1 tablespoon granulated sugar and 1/4 teaspoon cinnamon)
  • confectioner’s sugar (to sprinkle on cake)

1. Grease a 9″ cake pan and preheat oven to 350º.

2. In a large bowl with an electric mixer, beat butter, sugar, egg and vanilla extract until light and fluffy.

3. In a separate bowl, combine flour, baking powder, salt and nutmeg. Add to the butter mixture, alternating with the milk in batches. Mix until just combined. Spoon batter into the pan, and level off with a spatula.

4. Peel and core apples, slice into 1/4″ wedges. Press apple slices, core side down into batter, working in a circular pattern. Rinse off cranberries, and press into the batter. Sprinle with the cinnamon sugar.

5. Bake 35 to 40 minutes, test with a toothpick. Let cool on a wire rack. Sprinkle with confectioner’s sugar.
