Gashouse Eggs

Food-Header-1

GashouseEggsGashouse eggs are made by cutting a hole in a slice of bread, and cracking an egg in the hole. Olympia Dukakis made them for Cher in Moonstruck. This dish goes by many other names – bird in the nest, cyclops sandwich, dead bird in toast, egg on an island, man on a raft, one-eyed jacks, pregnant toast, Scottish pizza, and toast benedict. Call it whatever you want, I call it delicious.

I had some leftover asparagus pesto bread and new potatoes from last night’s dinner, so I treated myself to a really good breakfast. Remember to toast the cut out – it’s perfect for dipping into the yolk!

  • 1 large egg
  • 1 slice bread
  • 2 tablespoons butter
  • salt and pepper

1. Butter both sides of the bread. Toast one side, remove from pan, and cut a hole with a glass that is 2 to 3 inches in diameter.

2. Add butter to pan, and return bread toasted side up, crack egg into the hole. Cook for 2 to 3 minutes, flip if you like your eggs over easy.
