Apple Bars

These are more like bars than a cake, they’re dense and chewy. Almost like an apple blondie, they’re sturdy – perfect for packing in a lunch box. 

  • 1/4 cup butter, melted
  • 1/2 cup light brown sugar
  • 1/2 granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup flour, sifted
  • 1 Granny Smith apple, diced
  • 1 tablespoon granulated sugar
  • 1 tablespoon cinnamon
  1. Preheat oven to 350º. Grease an 8″ x 8″ baking dish and set aside.
  2. In a large bowl, mix together butter, and both sugars. Add egg, vanilla, and cinnamon.
  3. Add flour and stir until combined, then fold in diced apples – mixture will be thick.
  4. Spread mixture evenly into pan.
  5. In a small bowl, mix sugar and cinnamon and sprinkle on top of the batter.
  6. Bake for 40 to 45 minutes until firm. Let cool, and slice into bars.
