Chocolate Chip Rice Krispies Cookies

I stumbled across the recipe for these cookies searching for something else. I haven’t made them in years, so I thought I’d give it a whirl yesterday afternoon. The addition of the Rice Krispies make these cookies crispy-crunchy and adds a certain lightness to them. 

  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 cup butter
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups Rice Krispie cereal
  • 3/4 cup chocolate chips
  1. Preheat oven to 350º, line a baking sheet with parchment paper. In a medium bowl, combine the flour and baking soda, set aside.
  2. In the bowl of an electric mixer, cream butter and sugar, mix in vanilla and egg, then add the dry ingredients.
  3. Stir in cereal and chocolate chips.
  4. Drop tablespoons of dough 2 inches apart, and bake for 10 to 12 minutes. Makes 2 dozen cookies.
