Cornflake Peanut Butter Cookies

These cookies are no bake, take less than 15 minutes to throw together, and they are delicious! It sounds like a recipe taken from Family Circle magazine circa 1958, on the same page as the hot dog casserole and a Jello mold salad made with canned asparagus and mayonnaise – but trust me, you’re gonna love these cookies!

  • 1/2 cup corn syrup
  • 1/2 cup granulated sugar
  • 2 tablespoons butter
  • 1/2 cup peanut butter
  • 3 cups cornflakes
  1. Combine corn syrup and sugar in a saucepan over medium heat, and bring to a boil.
  2. Remove from heat and whisk in butter and peanut butter.
  3. In a large bowl, toss mixture with cornflakes until they are well coated.
  4. Drop by spoonfuls onto wax paper.
