Orange Banana Muffins

I was tidying the kitchen yesterday, when I came across a recipe card from Joe’s Aunt Jean. Guests were asked to share a recipe with me at my bridal shower, and over the years I’ve made almost all of them. Except for sweet potatoes with brown sugar and marshmallows, that’s like sprinkling sugar over a bowl of ice cream. Aunt Jean’s muffin recipe is just perfect – the only change I made was adding a handful of chocolate chips to the batter, because I love the combination of chocolate and orange!

  • 1 cup flour
  • 1 1/2 cups of rolled oats
  • 2 teaspoons baking powder
  • 1 large, ripe banana, mashed
  • 1 large egg
  • 1 teaspoon grated orange zest
  • 3/4 cup orange juice
  • 1/4 cup light brown sugar
  • 3 tablespoons vegetable oil
  • 1/2 cup semi-sweet chocolate chips
  1. Preheat oven to 425º, line a muffin tin with muffin papers, set aside.
  2. In a medium bowl, whisk flour, oats, and baking powder together.
  3. In a large bowl, mix egg, zest, orange juice, brown sugar, and oil. Add the flour mixture and stir until well combined. Fold in the chocolate chips.
  4. Divide the batter among the 12 cups and bake for 15 to 20 minutes, testing with a toothpick.
