Gooey Chocolate Cake

At the last minute, I threw this cake together to go with our anniversary dinner. Not much to look at, but it got rave reviews from the fellas. It’s a cheat, you start with a box cake mix, then add cream cheese, eggs, confectioners sugar to make it a layered dessert – very chocolatey, gooey, and delish!

  • 2 sticks butter, melted in 2 separate bowls
  • 1 package of chocolate cake mix
  • 3 large eggs
  • 1 – 8 oz. package cream cheese, softened
  • 1/4 cup cocoa powder
  • 16 oz. confectioners sugar
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350º, spray a 9″ x 13″ pan with cooking spray, set aside.
  2. Combine the cake mix, 1 egg, and 1 stick melted butter with an electric mixer. Press the mixture into prepared pan.
  3. In a large bowl with an electric mixer, beat the cream cheese until smooth. Add remaining 2 eggs and cocoa powder.
  4. Add the confectioners sugar, slowly add the remaining melted butter, then the vanilla.
  5. Pour over the cake mixture in pan, and bake for 30 to 40 minutes. Let cake cool on a wire rack.
