Butterscotch Blondies

I always like to add something a bit unusual into my Christmas cookie boxes. These butterscotch blondies are dense, chewy, and rich. A bowl and a wooden spoon are all the equipment you need to mix up this batch of butterscotchy goodness!

  • 1/2 cup butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup flour
  • 1/4 teaspoon Kosher salt
  • 3/4 cup butterscotch chips
  1. Preheat oven to 350º. Line an 8″ x 8″ baking pan with aluminum foil, and spray with non-stick cooking spray. Set aside.
  2. In a medium bowl, stir melted butter and brown sugar together. Make sure the mixture isn’t hot, then add the egg and vanilla.
  3. Mix in the flour and salt, and add the butterscotch chips.
  4. Pour batter into the pan, smooth out the surface with a spatula. Bake for 20 – 25 minutes, until the top is set, and the edges are pulling away from the sides of the pan.
  5. Put the pan on a wire rack, and let cool for an hour. Remove from pan and slice into 16 bars.
