Banana Chocolate Chip Muffins

Since we’ve been hanging around the old homestead so much these days, we’re looking to be productive – we made muffins with the spotted bananas in the fruit bowl that no one wants to eat. It lessens the guilt for when we binge watch Blue Bloods at night.

  • 1 1/3 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla
  • 1 cup mini chocolate chips
  1. Preheat oven to 350º. In a small bowl, whisk the flour, baking soda, and salt – set aside.
  2. In a large bowl, mash the bananas and add 1/4 cup of water.
  3. Stir in oil, sugar, eggs, and vanilla.
  4. Add flour mixture, until just combined – then stir in chocolate chips.
  5. Line a baking pan with baking cups, fill each about 3/4 full and bake for 20 to 25 minutes, testing with a toothpick. Makes 16.
