Rustic No-Knead Bread

Wednesday may be Prince Spaghetti Day, but around here we do rotini and meatball Thursdays. Of course, what pasta dinner would be complete without some crusty bread fresh out of the oven? This no-knead bread takes about 2 hours to rise, and 45 minutes to bake, no need to leave your house for a bakery quality loaf.

  • 1 package instant dry yeast (2 1/4 teaspoons)
  • 6 1/4 cups flour
  • 2 teaspoons kosher salt
  • 3 cups warm water
  1. In the bowl of a stand mixer with the paddle attachment, combine yeast, flour, and salt. Pour in the warm water, and mix until a soft dough is formed.
  2. Cover the bowl with plastic wrap and cover with a tea towel. Let dough rise for 2 to 3 hours.
  3. Preheat oven to 450º, heat a Dutch oven for 30 minutes. Flour hands and carefully transfer dough to pot. Place the lid on the Dutch oven and bake for 30 minutes. After the 30 minutes, remove lid and bake for an additional 10 to 20 minutes until bread is golden brown. Remove from pot and let cool on a wire rack.
