French Apple Cake

I’ve never met an apple cake I didn’t like. That said, this one is a gem! Large chunks of apples baked with a light batter makes for a lovely, moist cake, Dusted with confectioners sugar it’s fabulous with a cup of coffee in the morning, or a scoop of vanilla ice cream after dinner, makes it dessert worthy. Make this cake!

  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • pinch salt
  • 4 Granny Smith apples, peeled, cored, and cut into 1 1/2″ pieces
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 8 tablespoons butter, melted, and cooled
  • confectioners sugar for dusting (optional)
  1. Grease an 8″ cake pan, dust with flour and set aside. Preheat oven to 350º.
  2. In a small bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, beat eggs until light and frothy. Add sugar and vanilla and mix until well combined.
  4. Mix in half of the flour, add in half of the melted butter, and repeat.
  5. Fold in apples, and spoon in pan.
  6. Bake for 55 to 65 minutes, test with a toothpick. Let cool on a wire rack for 30 minutes. Run a knife around the outside of the cake, and turn out of the pan. Dust with confectioners sugar when completely cooled.
