I’ve never met an apple cake I didn’t like. That said, this one is a gem! Large chunks of apples baked with a light batter makes for a lovely, moist cake, Dusted with confectioners sugar it’s fabulous with a cup of coffee in the morning, or a scoop of vanilla ice cream after dinner, makes it dessert worthy. Make this cake!
- 3/4 cup flour
- 3/4 teaspoon baking powder
- pinch salt
- 4 Granny Smith apples, peeled, cored, and cut into 1 1/2″ pieces
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 8 tablespoons butter, melted, and cooled
- confectioners sugar for dusting (optional)
- Grease an 8″ cake pan, dust with flour and set aside. Preheat oven to 350º.
- In a small bowl, whisk flour, baking powder, and salt.
- In a large bowl, beat eggs until light and frothy. Add sugar and vanilla and mix until well combined.
- Mix in half of the flour, add in half of the melted butter, and repeat.
- Fold in apples, and spoon in pan.
- Bake for 55 to 65 minutes, test with a toothpick. Let cool on a wire rack for 30 minutes. Run a knife around the outside of the cake, and turn out of the pan. Dust with confectioners sugar when completely cooled.
