Apple Blondies

Our first snowstorm of 2021, and I’ve been making soup, bread, and apple blondies. Because what else are you gonna do besides shovel snow, watch movies, and eat?

  • 3/4 cup butter, melted
  • 1 1/2 cups light brown sugar
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 3 teaspoons vanilla extract
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 3 teaspoons baking powder
  • 3 cups flour
  • 3 cups apples, diced
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  1. Preheat oven to 350º, grease a 9″ x 13″ pan.
  2. In a large bowl with an electric mixer, mix melted butter and both sugars. Add eggs, vanilla, cinnamon, and baking powder. Mix in flour.
  3. Stir in apples, and pour the batter into prepared pan.
  4. Mix sugar and cinnamon, and sprinkle on top of batter. Bake for 40 to 45 minutes.
