Marry Me Cookies

Although I’m already married, I like to remind my husband what a lucky guy he is by baking really good cookies to pack in his lunch! (Actually, I’m the lucky one…) Anyway, these cookies are wonderful – they’re packed with oatmeal, dark brown sugar, white and semi-sweet chocolate chips. My project on a cold, snowy weekend!

  • 1 cup butter
  • 1 1/4 cups dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 cup old fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup white chocolate chips
  • 1 cup semi-sweet chocolate chips
  1. Melt the butter in a medium saucepan over medium-low heat.
  2. Remove from the heat and stir in both sugars. Transfer mixture to a town and chill for 10 minutes. Take bowl out of refrigerator and whisk in eggs and vanilla.
  3. In a medium bowl, whisk the flour, oats, baking soda, salt, and cinnamon. Stir in the flour mixture with a spoon, then fold in the white and semi-sweet chocolate chips.
  4. Chill dough for 30 minutes.
  5. Line baking pans with parchment. Roll heaping tablespoons of dough into balls and refrigerate for 30 minutes.
  6. While the dough is chilling, preheat oven to 325º. Bake for 12 to 14 minutes, until the edges just start to turn golden. Cool on a wire rack.
