Pear Crumb Muffins

I bought a ripe basket of pears over the weekend, and decided to use some of them to make  muffins. These muffins are made with chunks of pears with a crumb topping, and are a great alternative in the morning to my usual Cheerios!

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup buttermilk*
  • 2 teaspoons vanilla extract
  • 4 pears, peeled, cored, and chopped
  • 1/2 cup light brown sugar
  • 1 tablespoon flour
  • 2 tablespoons butter, cut into small pieces
  1. Preheat oven to 350º. Line two muffin tins with 18 baking papers.
  2. In a large bowl, whisk the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt together.
  3. Add eggs, oil, buttermilk, and vanilla – stir until well combined. Fold in chopped pears and spoon into baking papers.
  4. In a small bowl, combine brown sugar, flour and butter – mash with a fork, or your fingers. Sprinkle over batter, and bake for 20 to 25 minutes – testing with a toothpick.

*If you don’t have buttermilk – pour 1 tablespoon of white vinegar into a measuring cup, and fill it with whole milk to the one cup line. Let sit for 15 minutes.
