Chopped Summer Salad

Last week, we had quite a few days of 90+ degree days around these parts. When the weather fills you with dread about making dinner, this chopped salad is a lifesaver. Mine had imported tuna in olive oil and garbanzo beans as a protein, tomatoes, avocado, cucumbers, red roasted peppers, artichoke hearts, and fresh mozzarella. Chopped salad, because you can’t serve popsicles for dinner every night!

  • 1 – 5 oz. can imported tuna in oil
  • 1 cup garbanzo beans, rinsed and drained
  • 1 cup cucumber, peeled, quartered lengthwise, seeds removed
  • 1 red roasted pepper, skin and seeds removed
  • 1 large tomato, chopped
  • 1 avocado, chopped
  • 1 small red onion, finely chopped
  • 6 canned artichoke hearts, chopped
  • 1 cup fresh mozzarella, cut into bite sized pieces
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon oregano
  • juice of half a lemon
  • 2 tablespoons olive oil
  • salt and pepper to taste
