Easy Peanut Butter Cookies

These are the easiest and most peanut buttery cookies ever! No waiting for the butter to come to room temperature because the butter is melted, and no chilling the dough in the fridge. Start to finish, I made these cookies in a half hour!

  • 1 1/3 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon table salt
  • 2/3 cup better, melted
  • 1/2 cup + 1 tablespoon light brown sugar
  • 1/2 cup granulated sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350º. Line baking sheets with parchment paper.
  2. In a small bowl, whisk flour, baking powder, and salt together.
  3. In a large bowl, beat butter, light brown sugar, granulated sugar, peanut butter, egg, and vanilla until smooth.
  4. On low speed, add in the dry ingredients, don’t overmix.
  5. Scoop out dough, leaving 1 1/2 to 2″ apart on the baking sheet. Press dough with the tines of a fork. Bake for 12 to 14 minutes.
