Pumpkin Apple Streusel Muffins

We’re not big pumpkin pie fans in our house, but we do love pumpkin bread and pumpkin muffins. This recipe combines pumpkin and apples – a perfect fall combo!

For the muffins:

  • 2 1/2 cups flour
  • 2 cups granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups pumpkin
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 cups apples, peeled, cored, and finely chopped

For the streusel:

  • 2 tablespoons flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter
  1. Preheat oven to 350º, line a muffin pan with 18 papers.
  2. In a medium bowl, combine flour, sugar, pumpkin pie spice, cinnamon, baking soda, and salt.
  3. In a large bowl, whisk pumpkin, eggs, and oil. Stir in dry ingredients until just moistened, fold in apples. Fill paper liners 3/4 full.
  4. In a medium bowl, add the ingredients for the streusel. Use a pastry blender or a fork to combine until the mixture is crumbly. Sprinkle over muffin batter and bake for 30 to 35 minutes, test with a toothpick. Remove from pan and let muffins cool on a wire rack.
