Honey Applesauce Cake

What’s marvelous about this recipe for Honey Applesauce Cake is that it makes two loaves, one to keep and one to give away. It can be baked ahead of time and still be moist and delicious several days later. Another admirable feature is this cake can be made from ingredients found in your pantry, perfect when you feel like having something to snack on but you don’t want to venture out to the store!

  • 3 cups flour
  • 3 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 cup butter, room temperature
  • 1/2 cup honey
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 1/2 cups unsweetened applesauce
  1. Preheat oven to 350º, lightly coat two 9″ x 5″ loaf pans with non stick cooking spray.
  2. In a medium bowl, whisk the flour, baking soda, and cinnamon.
  3. In a large bowl cream butter, honey, and sugar. Mix in eggs, then add applesauce.
  4. Gradually add flour mixture until just incorporated.
  5. Divide batter into the pans and bake for 35 to 45 minutes. Let cool completely before turning out of pans.
