Peanut Butter Banana Muffins

I’m always looking for a way to use up the spotted bananas in the fruit bowl. These muffins  get their flavor from bananas, peanut butter, and chocolate chips – a perfect trifecta!

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 3 – 4 ripe bananas, mashed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup applesauce, sweetened or unsweetened
  • 1/2 cup peanut butter
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips
  1. Preheat oven to 350º. Line 2 muffins pans with 18 paper liners, set aside.
  2. In a small bowl, mix flour, baking powder, baking soda, salt, and cinnamon. In a large bowl, whisk the bananas, sugar and eggs – then add the applesauce, peanut butter, oil, and vanilla. Stir in the flour mixture until just combined, then fold in the chocolate chips
  3. Fill muffin cups 3/4 from the top, bake for 15 to 20 minutes.
