Chocolate Chip Zucchini Muffins

I had a hard time convincing The Boy to make zucchini muffins. He just couldn’t get over the fact that putting a vegetable in a muffin would be a good thing. He finally relented when he found out that chocolate chips were part of the recipe. Needless to say, he’s a fan!

  • 1 1/2 cups grated zucchini
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream or plain yogurt
  • 1 cup granulated sugar
  • 1 1/2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips
  1. Preheat oven to 375º. Line two muffin pans with 16 papers.
  2. Put zucchini, oil, eggs, vanilla, and sour cream/yogurt in a large bowl, stir and add in sugar.
  3. In a small bowl, whisk flour, cinnamon, baking soda, baking powder, and salt. Add to the wet ingredients, then fold in chocolate chips.
  4. Put two heaping tablespoons in each muffin cup and bake for 16 to 20 minutes. Test with a toothpick.
