Peach Muffins

The peaches were gorgeous at the market this weekend, my first thought was to make a peach pie. Those plans were scrapped when I discovered that the temperatures would be close to triple digits. Plan B – muffins, quick to mix up, and a mere 20 minutes in the oven. Sold!

  •  1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peaches, peeled and chopped
  1. Preheat oven to 350º, line a muffin pan with papers.
  2. In a small bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, blend sugars, eggs, oil, and vanilla with an electric mixer. Add flour mixture until just combined. Fold in peaches.
  4. Divide batter evenly among the muffin cups, bake for 20 to 22 minutes. Test with a toothpick, let cool on a wire rack.
