Peach Blueberry Yogurt Cake

The peaches were just gorgeous in the market this weekend, as were the blueberries. I didn’t have time to make a pie, so I threw together this simple cake made with yogurt and topped with fruit. It was perfect with coffee this morning!

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 oz. butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup yogurt
  • 2-3 peaches, sliced
  • 3/4 cup blueberries
  • 1 teaspoon granulated sugar
  1. Grease a 9″ x 3″ springform pan. Preheat oven to 350º.
  2. In a small bowl, whisk flour, baking powder, and baking soda, set aside.
  3. In a large bowl, beat butter, sugar, eggs, vanilla, and yogurt until smooth. Add flour mixture until just combined, and pour batter into pan.
  4. Top with sliced peaches and blueberries. Sprinkle remaining teaspoon of sugar on top and bake for 40 to 60 minutes. Test with a toothpick. Let cool in pan for 20 minutes, then remove from pan.
