Apple Muffins

I had some apples leftover from my Thanksgiving pie baking marathon, so I decided to make some muffins! These muffins are perfection with a cup of coffee in the morning.

  • 1 1/2 cups flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 2 Granny Smith apples, peeled, cored, and chopped

Topping

  • 1/4 cup granulated sugar
  • 2 tablespoons flour
  • 2 tablespoons butter, room temperature
  • 1 teaspoon cinnamon
  1. Preheat oven to 400º. Line a muffin pan with 12 cupcake papers.
  2. In a large bowl, whisk flour, sugars, baking powder, cinnamon and salt.
  3. Add oil, egg, and milk, then fold in apples. Divide batter in muffin papers.
  4. In a small bowl, combine the ingredients for the topping, sprinkle on top of the batter.
  5. Bake for 15 to 20 minutes, let cool on a wire rack.
