Chocolate Chip Ricotta Cookies

It’s that time of year, I’m posting recipes for Christmas cookies. Start making them now and store the dough in your freezer to bake later. These chocolate chip ricotta cookies were a huge hit with the fellas, my best test audience!

  • 2 cups flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • zest of one orange
  • 1 cup ricotta cheese
  • 1 cup mini chocolate chips
  1. In a small bowl, whisk flour, baking soda and baking powder.
  2. In a large bowl, blend butter and sugars. Add egg and vanilla, zest, mix in ricotta, then fold in chocolate chips.
  3. Chill dough for one hour.
  4. Preheat oven to 350º. Line a baking sheet with parchment, roll one tablespoon of dough into a ball spacing them about 2″ apart. Bake for 12 to 15 minutes, cool on wire rack.
  5. Makes about 3 dozen cookies.
