Lemon Oatmeal Cookies

It’s no secret I love all things lemon, so I was intrigued when I found a recipe for lemon cookies that uses oats as an ingredient. They are crisp around the edges, soft in the middle and have a wonderful texture!

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons lemon zest
  • 3 tablespoons lemon juice
  • 2 3/4 cups flour
  • 1 cup quick cooking oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • additional granulated sugar
  1. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, lemon zest, and lemon juice.
  2. In a small bowl, whisk flour, oats, baking powder, and salt. Gradually add to the butter/sugar mixture.
  3. Wrap in plastic and chill for 2 hours.
  4. Preheat oven to 375°. Measure out tablespoons of dough and roll into balls. Place 2″ apart on parchment-lined baking sheets. Spray the bottom of a glass with cooking spray, then dip in the granulated sugar. Press cookies with bottom of glass to flatten, redipping in sugar as needed.
  5. Bake for 6 to 8 minutes, until the edges of the cookies are golden. Transfer to a wire rack to cool. Makes 6 dozen.
