This dish goes by many other names &#8211; bird in the nest, cyclops sandwich, dead bird in toast, egg on an island, man on a raft, one-eyed jacks, pregnant toast, Scottish pizza, and toast benedict. Call it whatever you want, I call it delicious.<\/p>\n<p>I had some leftover <a href=\"http:\/\/willceau.com\/news\/2014\/04\/07\/braided-asparagus-pesto-bread\/#more-16038\" target=\"_blank\" rel=\"noopener noreferrer\">asparagus pesto bread<\/a>\u00a0and new potatoes from last night&#8217;s dinner, so I treated myself to a really good\u00a0breakfast. Remember to toast the cut out &#8211; it&#8217;s perfect for dipping into the yolk!\u00a0<!--more--><\/p>\n<ul>\n<li>1 large egg<\/li>\n<li>1 slice bread<\/li>\n<li>2 tablespoons butter<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>1. Butter both sides of the bread. Toast one side, remove from pan, and cut a hole with a glass that is 2 to 3 inches in diameter.<\/p>\n<p>2. Add butter to pan, and return bread toasted side up, crack egg into the hole.
