Let&#8217;s face it, steamed broccoli isn&#8217;t as sexy as <a href=\"http:\/\/willceau.com\/news\/2013\/04\/23\/diner-banana-cream-pie\/\" target=\"_blank\" rel=\"noopener noreferrer\">banana cream pie<\/a>, but <em>maybe<\/em> a baby spinach salad with sliced avocado and a homemade mustard vinaigrette will turn some heads!\u00a0<!--more--><\/p>\n<ul>\n<li>1 tablespoon dijon mustard<\/li>\n<li>4 tablespoons red wine vinegar<\/li>\n<li>1 teaspoon granulated sugar<\/li>\n<li>1\/2 teaspoon kosher salt<\/li>\n<li>1\/2 teaspoon fresh ground pepper<\/li>\n<li>1\/2 teaspoon dried thyme<\/li>\n<li>1\/2 cup olive oil<\/li>\n<li>1 tablespoon mayonnaise<\/li>\n<\/ul>\n<p>1. In a blender, combine the first 6 ingredients and blend until smooth. You can also do this with a whisk.<\/p>\n<p>2. Remove the plastic fill cap from the lid, turn blender on low and slowly add the olive oil. (If doing by hand, whisk the ingredients while <em>slowly<\/em> drizzling in the oil.) Then whisk in\u00a0the mayonnaise.<\/p>\n<p>3.
