Throw &#8217;em together\u00a0early in the morning, a quick saut\u00e9 in a skillet,\u00a0and serve with a salad. It&#8217;s a light dinner that&#8217;s easy to make, won&#8217;t heat up your kitchen, and is delicious!\u00a0<!--more--><\/p>\n<ul>\n<li>1-16 ounce\u00a0can backfin crabmeat<\/li>\n<li>1 small onion, finely chopped<\/li>\n<li>1 cup fresh breadcrumbs<\/li>\n<li>3\/4 teaspoon kosher salt<\/li>\n<li>1\/2 teaspoon fresh ground black pepper<\/li>\n<li>1\/4 teaspoon cayenne pepper<\/li>\n<li>1 teaspoon freshly squeezed lemon juice<\/li>\n<li>2 large eggs, lightly beaten<\/li>\n<li>4 tablespoons butter, melted<\/li>\n<li>1 cup flour<\/li>\n<li>2 tablespoons butter<\/li>\n<li>2 tablespoons olive oil<\/li>\n<\/ul>\n<ol>\n<li>Pick over the crabmeat to remove any small pieces of shell. Place the crab in a large bowl and add the onion, breadcrumbs, salt, pepper, and cayenne. Mix with a wooden spoon, add the lemon juice, eggs, and melted butter, stir until well combined.<\/li>\n<li>Divide crab mixture into 8 portions. Form into patties, dip into flour, shake off the excess, and place on a plate. Chill for an hour.<\/li>\n<\/ol>\n<p>Heat remaining butter and olive oil in a large skillet over medium high heat. Place crab cakes in pan and heat for 4 to 5 minutes per side until golden brown. Serve with cocktail sauce.<\/p>\n<p>Cocktail Sauce<\/p>\n<ul>\n<li>3\/4 cup ketchup<\/li>\n<li>1 tablespoons horseradish<\/li>\n<li>1 teaspoon freshly squeezed lemon juice<\/li>\n<li>1\/4 teaspoon hot sauce<\/li>\n<\/ul>\n<ol>\n<li>Combine all ingredients and chill until ready to serve.<\/li>\n<\/ol>\n<p><em>(Adapted from Scott Peacock&#8217;s crab cakes.)<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>These crab cakes are\u00a0one of my do-ahead dinners in summer.
