It uses up\u00a0the bounty\u00a0of tomatoes in my backyard, and start to finish &#8211; can be made\u00a0in about 20 minutes. Why labor on Labor Day?\u00a0<!--more--><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 small, yellow onion, diced<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>3 &#8211; 4 large tomatoes, diced (about 3 cups)<\/li>\n<li>2 1\/2 teaspoons Cajun seasoning<\/li>\n<li>4 tilapia filets<\/li>\n<\/ul>\n<ol>\n<li>In a large skillet over medium heat, warm the olive oil and\u00a0add the onions and garlic. \u00a0Stir frequently, so as not to burn the garlic, until onions soften, about 2 to 3 minutes. Add the diced tomatoes and Cajun seasoning to the pan and cook for a few minutes more.<\/li>\n<li>Place tilapia filets on top of the cooked tomatoes, cover, and simmer for 13 to 15 minutes. Place the filets on a platter and ladle\u00a0the sauce on top.
