The temperatures were\u00a0in the 90s last\u00a0week &#8211; it certainly didn&#8217;t feel like fall.\u00a0However, the berries and peaches\u00a0in the market are\u00a0still glorious, and now that swimsuit season is officially over, it&#8217;s time to indulge!\u00a0<!--more--><\/p>\n<p><strong>The crust:<\/strong><\/p>\n<ul>\n<li>1 1\/3 cups of all purpose flour<\/li>\n<li>1 stick of very cold butter, cut up into small pieces<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/4 cup ice water<\/li>\n<li><strong>The filling:<\/strong>\n<ul>\n<li>3 cups\u00a0strawberries, sliced<\/li>\n<li>2 large peaches, peeled and sliced thin<\/li>\n<li>1\/2 pint blueberries<\/li>\n<li>1\u00a0cup granulated sugar<\/li>\n<li>3\u00a0tablespoons cornstarch<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 tablespoon butter, cut into pieces<\/li>\n<li>1 egg, beaten<\/li>\n<li>course sugar<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ol>\n<li>Place flour, butter, and salt in a food processor with a metal blade pulse until mixture resembles coarse meal. Add ice water until the dough begins to clump together. Form into a ball, place in plastic bag, and work dough into a flat disc. Refrigerate for an hour.<\/li>\n<\/ol>\n<p>2. In a large bowl, toss sliced strawberries with the sugar, cornstarch, and vanilla.<\/p>\n<p>3. Roll out two thirds of the dough to fit an 8\u2033 pie dish, ease pastry onto plate. Scoop the fruit into the pastry, dot with butter. Roll out remaining pastry and cut out long 1\/2\u2033 strips. Weave the lattice crust, tuck under the crust and crimp.<\/p>\n<p>4. Place pie on a baking sheet and bake in a preheated 425\u00ba oven for 15 minutes.
