It was the perfect light dessert for our BBQ on Saturday night! And the perfect light breakfast on Sunday.<\/p>\n<ul>\n<li>\n<div id=\"yui_3_16_0_ym19_1_1464388847223_14806\"><strong>For the topping:<\/strong><\/div>\n<ul id=\"yui_3_16_0_ym19_1_1464388847223_14807\">\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14808\">\u00bc cup plus 2 tablespoons flour<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14809\">\u00bc cup granulated sugar<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14810\">pinch of salt<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14811\">2 tablespoons butter, melted<\/li>\n<\/ul>\n<div id=\"yui_3_16_0_ym19_1_1464388847223_14812\"><strong>For the loaf:<\/strong><\/div>\n<ul id=\"yui_3_16_0_ym19_1_1464388847223_14813\">\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14814\">1\u00bd cups flour<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14815\">1 cup granulated sugar<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14816\">1 teaspoon baking powder<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14817\">\u00bd teaspoon salt<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14818\">1 5-oz can evaporated milk<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14819\">\u2153 cup vegetable oil<\/li>\n<li>2 teaspoons lemon zest<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14821\">2 large eggs<\/li>\n<\/ul>\n<div id=\"yui_3_16_0_ym19_1_1464388847223_14822\"><strong>For the glaze<\/strong>:<\/div>\n<ul id=\"yui_3_16_0_ym19_1_1464388847223_14823\" dir=\"ltr\" data-setdir=\"false\">\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14824\">\u00bd cup confectioners\u00a0sugar<\/li>\n<li id=\"yui_3_16_0_ym19_1_1464388847223_14825\">3 teaspoons lemon juice<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba and grease a 4&#8242; x 8&#8243; loaf pan. In a small bowl, combine flour, sugar, salt. and butter for the topping. Set aside.<\/li>\n<li>In a medium bowl, stir\u00a0the flour, sugar, baking powder, and salt together.<\/li>\n<li>In a large bowl, whisk evaporated milk, oil, zest, and eggs, add dry ingredients and stir until just combined. Pour into prepared pan, and sprinkle\u00a0with reserved topping. Press down gently with fingertips. Bake for 60 minutes, check for doneness with a toothpick inserted into the center, you may need to bake for an additional 5 to 10 minutes &#8211; I did.<\/li>\n<li>When finished, remove from oven and cool on a wire rack for 15 minutes. Run a knife along the edges, and turn loaf out of pan.
