A simple crumb mixture pressed into a cake pan, a layer of peaches, and topped with more crumb mixture. With a scoop of vanilla ice cream &#8211; it&#8217;s divine!<\/p>\n<p><!--more--><\/p>\n<p><strong>Crumb Topping:<\/strong><\/p>\n<ul>\n<li>2 1\/2 cups flour<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>pinch salt<\/li>\n<li>6 1\/2 tablespoons butter<\/li>\n<li>1 large egg<\/li>\n<\/ul>\n<p><strong>Peach Filling:<\/strong><\/p>\n<ul>\n<li>3 cups peaches peeled, halved, thinly sliced<\/li>\n<li>6 tablespoons granulated sugar<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba, grease and flour an 8&#8243; cake pan.<\/li>\n<li>Peel and slice peaches, toss with sugar, set aside.<\/li>\n<li>In a large bowl, whisk flour, sugar, baking powder, and salt. Add the butter using a fork to make a crumb mixture, then mix in egg.<\/li>\n<li>Add 2\/3 of the crumb mixture to the pan, spoon the peaches over it, then sprinkle the remaining crumb mixture on top.
