Being short on time, I skipped the traditional pie crust for a store bought graham cracker crust, and frozen whipped topping instead of whipping heavy cream. Despite the shortcuts, the end result was tasty, my Valentines approved!\u00a0<!--more--><\/p>\n<ul>\n<li>1 cup sweetened flaked coconut, divided<\/li>\n<li>3 cups half and half<\/li>\n<li>2 large eggs, beaten<\/li>\n<li>3\/4 cup granulated\u00a0sugar<\/li>\n<li>1\/2 cup flour<\/li>\n<li>1\/4 teaspoon kosher salt<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 &#8211; 9&#8243;\u00a0graham cracker crust &#8211; store bought<\/li>\n<li>1 cup frozen whipped topping, thawed<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba.<\/li>\n<li>Spread 1\/4 cup of\u00a0coconut on a baking sheet and bake, stirring occasionally, until golden brown, about 5 minutes. Set aside.<\/li>\n<li>In a heavy\u00a0saucepan, combine\u00a0the\u00a0half and half, eggs, sugar, flour, and salt. Bring to a boil over low heat, whisking constantly. Remove the pan from the heat, and stir in the remaining\u00a0coconut and the vanilla extract.<\/li>\n<li>Pour the filling into the pie shell and chill until firm, 3 to 4\u00a0hours.<\/li>\n<li>Top with whipped topping and reserved, toasted coconut.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I wanted to make dessert for Valentine&#8217;s Day dinner last night.
