Perfect with coffee in the morning, flecked with shredded carrots and dotted with raisins. It makes getting out of bed on these last cold days of winter bearable!<\/p>\n<p><!--more--><\/p>\n<ul>\n<li>2 cups flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon kosher salt<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>1 cup granulated sugar<\/li>\n<li>2 large eggs, room temperature<\/li>\n<li>1 cup milk, room temperature<\/li>\n<li>1\/2 cup canola oil<\/li>\n<li>1 cup grated carrots<\/li>\n<li>1\/2 cup raisins<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba, grease a 9&#8243; x 5&#8243; loaf pan.<\/li>\n<li>In a medium bowl whisk flour, baking powder, baking soda, salt, and cinnamon &#8211; set aside.<\/li>\n<li>In a large bowl, whisk sugar, eggs, milk, and oil together. Stir in the flour mixture until well combined, fold in the carrots and raisins.<\/li>\n<li>Pour into prepared loaf pan, and bake for 40 to 50 minutes.
