These cookies are soft, the texture is more cake-like than a crisp cookie. They&#8217;re can&#8217;t-just-eat-one delicious!<br><\/p>\n\n\n\n<!--more-->\n\n\n\n<ul class=\"wp-block-list\"><li>2 1\/4 cups flour<\/li><li>1 teaspoon ginger<\/li><li>1 teaspoon cinnamon<\/li><li>1\/4 teaspoon salt<\/li><li>2 teaspoons baking soda<\/li><li>2 tablespoons hot water<\/li><li>1\/2 cup shortening<\/li><li>1\/2 cup granulated sugar<\/li><li>1\/2 cup molasses<\/li><li>1 large egg<\/li><li>6 tablespoons cold water<\/li><li>coarse sugar for sprinkling<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 400\u00ba. Line baking sheet with parchment paper or spray with baking spray.<\/li><li>Sift flour, ginger, cinnamon, and salt in a medium bowl, set aside. Dissolve baking soda in the hot water.<\/li><li>In a large bowl, mix shortening, sugar, molasses, and egg until light and fluffy. Mix in flour mixture, alternately with cold water, then mix in the baking soda.<\/li><li>Drop by rounded tablespoons, 2 inches apart onto baking sheet, and sprinkle with sugar.
