Chicken and vegetables are layered in a pan and baking mix is poured on top. Easy to make, and a big hit with the fellas!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<!--more-->\n\n\n\n<ul class=\"wp-block-list\"><li>4 tablespoons butter<\/li><li>2 cups fresh or frozen vegetables (I used fresh carrots, peas, and asparagus)<\/li><li>1\/4 cup onion, chopped<\/li><li>1 cup shredded cheddar cheese<\/li><li>2 cups baking mix (like Bisquick)<\/li><li>1 1\/2 cups milk<\/li><li>1 1\/2 cups chicken stock<\/li><li>2 chicken stock cubes<\/li><li>1 can (10.75 oz.) cream of chicken soup<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 350\u00ba.<\/li><li>Cut butter in pieces and place in the bottom of a 9&#8243; x 13&#8243; pan. Place in oven to melt.<\/li><li>In a large bowl, mix the baking mix and milk. Set aside.<\/li><li>In a medium bowl, mix the chicken stock, chicken stock cubes, and cream of chicken soup.<\/li><li>Assemble casserole &#8211; add chicken to the casserole pan. Layer in vegetables, onion, cheddar cheese. Pour baking mix over the top, then soup\/stock.
