While we love my mom&#8217;s banana bread &#8211; this recipe adds pineapple tidbits for a tropical twist. I have a feeling that Jack Lord would have loved these! <!--more--><\/p>\n<ul>\n<li>4 medium bananas<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1\/2 cup light brown sugar<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 cup butter, melted<\/li>\n<li>1\/2 teaspoon vanilla<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 1\/2 cups flour<\/li>\n<li>1 cup pineapple tidbits<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba. Line two muffin pans with 18 paper liners, set aside.<\/li>\n<li>Mash the bananas in a large bowl. Add the sugars, eggs, butter and vanilla.<\/li>\n<li>In a small bowl, whisk the baking soda and flour together. Add to wet ingredients in three batches until combined. Stir in the pineapple tidbits.<\/li>\n<li>Drop 2 heaping tablespoons in each muffin paper, bake for 20 minutes or until a toothpick inserted into the center comes out clean.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m always looking for a way to repurpose the overripe bananas in my fruit bowl.
