Macaroni salad was a staple in Hawaiian plate lunches &#8211; as laborers that worked on the plantations didn&#8217;t eat typical fare like sandwiches. From Wikipedia:<\/p>\n<blockquote><p>Although the exact origin of the Hawaiian plate lunch is disputed,<sup id=\"cite_ref-khnl_1-1\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Plate_lunch#cite_note-khnl-1\">[1]<\/a><\/sup> according to Professor Jon Okamura of the <a title=\"University of Hawai\u02bbi\" href=\"https:\/\/en.wikipedia.org\/wiki\/University_of_Hawai%CA%BBi\">University of Hawai\u02bbi<\/a>, the plate lunch likely grew out of the Japanese <a title=\"Bento\" href=\"https:\/\/en.wikipedia.org\/wiki\/Bento\">bento<\/a>, because &#8220;bentos were take away kinds of eating and certainly the plate lunch continues that tradition&#8221;.<sup id=\"cite_ref-khnl_1-2\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Plate_lunch#cite_note-khnl-1\">[1]<\/a><\/sup> Its appearance in Hawaii in recognizable form goes back to the 1880s when plantation workers were in high demand by the fruit and sugar companies on the islands.<sup id=\"cite_ref-Carbo-Loading_2-0\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Plate_lunch#cite_note-Carbo-Loading-2\">[2]<\/a><\/sup> Laborers were brought to Hawaii from around the world, including from <a title=\"China\" href=\"https:\/\/en.wikipedia.org\/wiki\/China\">China<\/a>, <a title=\"Japan\" href=\"https:\/\/en.wikipedia.org\/wiki\/Japan\">Japan<\/a>, <a title=\"Portugal\" href=\"https:\/\/en.wikipedia.org\/wiki\/Portugal\">Portugal<\/a>, and the <a title=\"Philippines\" href=\"https:\/\/en.wikipedia.org\/wiki\/Philippines\">Philippines<\/a>. Kaui Philpotts, former food editor of the <i><a class=\"mw-redirect\" title=\"Honolulu Advertiser\" href=\"https:\/\/en.wikipedia.org\/wiki\/Honolulu_Advertiser\">Honolulu Advertiser<\/a><\/i>, notes that the laborers &#8220;didn\u2019t eat sandwiches or things like that; it was leftover rice and a lot of things like canned meat or <a title=\"Teriyaki\" href=\"https:\/\/en.wikipedia.org\/wiki\/Teriyaki\">teriyaki<\/a> or cold meat or maybe scrambled eggs or pickles, and almost no salad or vegetable.&#8221;<sup id=\"cite_ref-Carbo-Loading_2-1\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Plate_lunch#cite_note-Carbo-Loading-2\">[2]<\/a><\/sup> Later on, <a title=\"Macaroni salad\" href=\"https:\/\/en.wikipedia.org\/wiki\/Macaroni_salad\">macaroni salad<\/a> was added to the plates, as it seemed to bridge national tastes and also mixed well with gravy-covered slabs of meat.<\/p><\/blockquote>\n<p><!--more--><\/p>\n<ul>\n<li>2 cups dry elbow macaroni<\/li>\n<li>1 \u00a0cup mayonnaise<\/li>\n<li>2 hard cooked eggs, peeled and grated on the large holes of a box grater<\/li>\n<li>2 tablespoons yellow onion, finely diced<\/li>\n<li>1 small celery rib, finely diced<\/li>\n<li>pinch sugar<\/li>\n<li>salt and pepper<\/li>\n<li>1\/2 teaspoon sweet paprika<\/li>\n<\/ul>\n<ol>\n<li>Bring a large pot of water to a boil, add macaroni and cook about 8 minutes until tender. Pour into a colander and rinse in cold water. Drain.<\/li>\n<li>Transfer pasta into a large bowl, add mayonnaise, eggs, onion, celery, sugar, salt, pepper, and paprika.
